Extending length of stoker probes

I want to extend the length of some of my stoker temp probes. I know you can use stereo cable to extend them, but I want to extend the run between the probe and the plug - the orange wire.

Is there a way to do this by cutting the plug off and soldering some new wire to the 2 pieces? If so, what type of wire would I need? I am asking in regards to pit and food probes.

I would not do this. The wire is very specifically designed for high heat. The orange insulation is silicon. I've been looking to find some silicon insulation but cannot find a source.

I would extend it by the probe, leaving the orange wire as the only part inside the smoker. I just want a little longer run so I can homerun all of the plugs in a plastic box.
 
The wire for any extension must be of the same metals as the two wires of the thermocouple itself. If you don't you begin measuring the points where the patch was added, rather than the point inside the cooker.

Extension wires are sold for each type of thermocouple.

The wires are pretty resistant to soldering so the usual solution is to buy plugs and sockets with screw connections, again made of the same metals as the thermocouple.

Its been said before: extend the 1/4" headphone cables. It will be less ugly and won't compromise the temperature measuring capability. You will also save a quite a bit of money.
