Easy Potato Salad

If you hate boiling and peeling potatoes this tasty recipe is for you.

1 bag refrigerated uncooked hash browns (little over 1 LB)
2 hard boiled eggs, rough chopped
mayo to taste...about 3 TBS
Yello mustard to taste...about 2 tsp.
pickle relish 1-2 TBS
2 slices crispy bacon/rough chopped
salt
pepper

1. Put hashbrowns in microwave safe bowl, cover, microwave 5 minutes. Remove, stir, and microwave for another 5 minutes (time may vary due to different wattage microwaves).
2. Remove from microwave and place in refridgerator to cool for 30 minutes.
3. Add remaining ingredients stir to combine. Enjoy!!!
