Easy Beef Tacos

This is quite different from the usual taco recipe we normally make, but DH was in the mood for something different in the next few days. So I gave him the binder with taco/tortilla recipes. After wiping off his drool, (and he only got a little way into the binder) he came up with 4 recipes he would like to make. I don't know in what order he wants to make them, but I am posting this one first. lol Sorry, I know it's not a grilling recipe, but this recipe might come in handy on a rainy/real cold day. lol

Easy Beef Tacos

3 TB. lime juice
3 TB. chopped fresh cilantro or parsley
1 tsp. lime zest
1 tsp. chili powder
1/2 tsp. salt
1/4 tsp. pepper
3 TB. oil
4 cups sliced (into strips) leftover roast beef, about 1 1/2 lbs.
3 cups shredded lettuce, about 1/2 lb.
12 taco shells
3/4 cup salsa
3/4 cup sour cream
1 avocado, diced

In bowl, stir together lime juice, cilantro, zest, chili powder, salt and pepper until salt dissolves. Slowly whisk in oil until thickened. Add beef; toss to coat. Let stand 30 minutes (or refrigerate overnight, allowing to come to room temperature before assembling). Divide lettuce and beef among taco shells. Top with salsa, sour cream and avocado.
