Hey all,
I just pulled my bird from the brine and have a slight concern. To start, the bird wasn't fully submerged in the brine. The tips of the legs and a small portion of the back were not submerged. When I pulled the bird for a thorough rinse just a few minutes ago I notices some light brown spots on the back, which seem to be right about the area that wasn't submerged in the brine.
I thawed this bird properly in the fridge and it hasn't been thawed more than 2 days. Are the light brown spots anything to worry about or do you know what could have caused them? Is it just the exposure to the air?
I realize this is probably hard to "diagnose" based on the description, but any thoughts would be a appreciated because I don't want to serve a bad bird.
***EDIT*** - There are just 2 or 3 spots about the size of a nickel.
