Daughters B Day Grillin Party

For my Daughter's 12th b-day I am doing Fajitas. My plan is to use flat iron and chicken breast for the meat and a grilling basket for bell/ onions....

Want to mark up the wraps, should I use oil? What kind? Do them alone or make up then put back on?

Any and all suggestions are welcome reguarding the procedure and seasoning.

I haven't done this kinda cook before, I know you pro's will keep me from looking bad for the party/18 quest!

consider leaving the tortillas for the fajitas off the grill, and instead mix in some grilled quesadillas as a app or a compliment to the fajitas.

I'll brush one side of the tortillas with oil, put the oiled sides together and make a big stack. Have a mise en place set up with: tortilla stack, grated cheese, and mix-ins (chopped, cooked chorizo and or shrimp, diced tomatoes, minced cilantro and or green onions, etc). Toss a tortilla on (oil side down), add cheese and mix ins and wait for the cheese to melt. At that point, either fold in half, or top with the next torilla, press,and flip.
 
Bump: This cook is happening today, need some advice.

Should I lay on the fajita seasoning thick before I grill or light, then when I cut up dust again?

Should I use the same fajita seasoning for the grilled veggies?

What is the best oil to use to complement this cook?

lay it on fairly heavily. After grilling, resting and slicing, toss the pieces with the juice from the cutting board. the rub and meat juice will make a bit of a sauce.

depending on your flavors, a bit of fresh lime juice might be nice too.
 
Hey Glenn - Nice job and I'll bet there were a few very appreciative guests there and certainly one appreciative daughter. And another compliment to you - It takes a great Dad to get involved like that in your 12 year old daughters B-day. Bob
