This salad is always a hit. The recipe is rather lengthy, so just attached a PDF. I usually sub in a 12 oz. package of frozen corn for the shoepeg and add a couple cloves of finely minced garlic.

This sounds good. It's similar to a recipe posted on here by Bob Correll, called Redneck Caviar.
I make that A LOT and my gang thinks it's the bomb! I often add pinto beans, just cause I like them.
I'm guessing the pintos are what makes yours the cowboy version?

Edit: Oops, the recipe was actually posted by Charles Howse, but he credited Bob for it. And Bob has kept
the recipe active.
 
Saw the other recipe. The dressing is a lot different too. Don't know about the cowboy part, it's not my recipe. My wife usually makes it.
