Just a question. I was in Costco today and needed to pick up some burger patties. They has 75/25 ground beef and at a few dollars more, 75/25 Angus Ground chuck with ground beef. I opted for the angus, but does anybody know if they are really any different?

Angus is just a breed so It might be worth it if you bought farm raised BA ( Black angus ) but regular commercial I don't believe so.

I think they are different.

The flavor of the Angus Chuck 75%. ( Black packaging ) is good for a frozen patty.

The cheaper stuff is probably made from a higher percentage of trimmings, which can be any part of the carcass (plus fat, of course.) The more expensive is mostly ground chuck, so the flavor profile is more predictable from batch to batch. Also, the feed and finishing is likely more homogenous coming from a single breed and cut - that's the primary determinant of taste.

Until you get to the rare and heritage varieties, the breed has nothing to do with it.

Some of the Costco burgers are 1/3lb. which we find too big. I think they carry 1/4 lb ones too though. Have had the grass fed ones and they're good but again at 1/3lb a bit too much.

I had previously bought the more lean sirloin burgers, but they did not make the tastiest burgers. Not quite enough fat. Nice thing about the 1/3 pound patties is you can thaw three of them for a pound of ground beef when you need it.
