Coconut Curry Sauce for Seafood Mix


 
The lemongrass might work fine. I'm leery about the cilantro. Like parsley, I don't think it dries well. But it would be worth a try.

The standard is 1/3 part dry = 1 part fresh--but I think in some cases that doesn't work well. I'd go with 1/2 dry with the lemongrass, 1/3 with the cilantro.

Well made the green tonight. No problems. Came out perfect. Left the seeds in the peppers so it's nice and hot. Wife is home on the weekend so will make it with some scallops and rice on Saturday night!

I'm going to put the red together tomorrow. Thanks again for taking the time to put this together. It's much appreciated!
