Normally I cook Prime with strips but since I have discovered pellet cooking I have been buying Choice and honestly these strips eat like tenderloin. And who says you can't get a crust with a nice pink center on a pellet grill? Check this guy out, and a gorgeous rosy inside, 125 temp. Darn I love this thing!

If you really want a crust, get some cast iron hot on your grill and give it a good sear.

I do that if I am forced to cook inside. But, I will let you in on a little secret as well. I have tried side by side with my All Clad SS skillet and my CI Lodge and quite honestly they seem to perform very much alike. To the point nearly impossible to tell them apart. But, I can just stick the All Clad in the dishwasher And when outside cooking I'm absolutely pleased with my results. However fried chicken? Now THAT is where CI shines for me. Nothing makes fried chicken like my Lodge. I have a big deep Lodge and oh boy does that thing make some chicken
