Juice of one lime, about 1/4 cup
1 tablespoon dried thyme
1 teaspoon ground allspice
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt or more to taste
1 teaspoon apple-smoked habanero ketchup
1 tablespoon 1:1:1 honey:molasses:maple syrup blend
Coat your butt well, marinate for an hour or a day, smoke with hickory and oak. Serve with any sauce you like, or none at all.
