BLT Salad

I made this for a party over the weekend and it turned out pretty well. I don't measure very well, but here are approximations.

1 package of Romaine hearts (3 to a bag)
1.5# Roma tomatoes
2# bacon
1 C diced green onions
1 C shredded cheddar jack cheese
3 C (cooked) Ditalini pasta
Bottle of ranch dressing

Fry up the bacon (I used 1.5 pounds only) and break into small pieces. Cook the pasta as directed. Slice the lettuce into thin strips, discarding the core. For the tomatoes, I halve them and scoop out the liquid and loose insides and then dice.

Mix the lettuce and pasta with about 1/2 bottle of your favorite ranch dressing. After the salad reduces down, add in the tomatoes, bacon, cheese, and onions. Add additional dressing to taste. I ended up using about 3/4 of the bottle for the salad. I didn't salt the salad, but added several grinds of pepper before tossing one last time.

Serve immediately.

I made this the night before and put the pasta in the bottom of the serving bowl, covered with the lettuce and green onions. I kept the cheese, bacon, and tomatoes in separate containers prior to mixing. Worked out well.
