I have a 30 lb bird I would like to do on my WSM. I have read some previous posts on these larger birds. I like the idea of two racks (breast on top, legs/thighs on bottom). What kind of time am I looking at with all doors open in cold weather? I was looking at the salted turkey recipe at 325-340 rather than brined, but may be persuaded to use a brine (?maple).
