Can you smoke food on the Ranch or would I be better off with a 26.75 or a performer with a smokenator? Most members seem to like the performer and I wonder if there will be a rotisserei for the 26.75!
 
no rotis. ive found you can smoke on anything. some things will need more babysitting then others. thats the beauty of the wsm. set it and go about your business. tending fire is fun sometimes when you have the time.

The absolute single best food I have ever tasted was a 4lb pork butt on my performer. No smokenator needed. Yes it was more work to keep temps reasonable than a WSM, but I can tell you it is possible to smoke on a performer.
 
I'm using the smokenator on my 22.5 Weber now. It allows more free time than using an open fire. In at 6:30 AM EDT and I'll tend to it all day every few hours.
 
The 22.5 inch kettle is going to be your most versatile charcoal Weber. The 26.75 is, supposedly, fantastic, but there are less accessories and less toys (if you're in to that kind of thing). Ditto the Ranch.

On a 22.5 kettle you can grill, roast, smoke, bake, just about anything. It's not as "good" a smoker as a WSM simply because it needs more tending. It's not as good at feeding a crowd as a Ranch. But, it hits a lot of points right in the middle, and it's an incredibly versatile piece of equipment.

The Performer is popular because it jacks the standard 22.5 up a few notches. It has a fantastic work table attached, storage for your utensils, charcoal storage, one touch cleaning, and a gas assist to speed up lighting.

You can smoke on anything. Smoking on a kettle is easy. A smokenator makes it easier, but it's not completely necessary. You'll be able to smoke a butt, cut racks of ribs, or a small brisket no problem. You just won't be able to do an overnight cook without tending the fire.

Stan,Your reply was very helpful. That wood fired oven looks like it would be a lot of fun.Bet it makes some great pizza. I'm thinking of getting a kettle pizza oven and attempt some grilled pizza!
 
It IS fun. I'd say it's actually better than a Weber grill, but you've got to have some serious dedication (and a very patient wife!) to go WFO.
 
Smoking is not as easy as a smoker, but you can set a fire in a Kettle that will burn at 250 without tending for 6 hours, plenty of time for most smoking scenarios for that amount of food.

I want to get a 26.75, once I have that I figure I can smoke anything overnight without any accessories.

smokenator seems really overpriced for what it is.

although the hovergrill they sell seems like a decent buy (although a 2nd upside grill grate seems to work great for me)
 
I ordered a smokenator with the hover grill for a mothers day cook, but it didn't arrive in time so I went out and got a few firebricks and did my first smoke using a minion start with wicked good briquettes. I've now done the same cook using the smokenator. The verdict? The smokenator does a better job of acting as a baffle and the water pan is nice for dialing in the temp...but the firebricks weren't that much harder to maintain the temp with. Both cooks were fantastic. If I were to do it again I don't think I'd order the smokenator...but I don't regret it either.
 
Get a 22.5 kettle and a WSM and you can cook just about anything. I got my WSM and 2 kettles for $140 total off craigslist.
