Asian-Spiced Country-Style Pork Ribs
2 racks country-style pork ribs (each 1 to 1 1/2 lb.)
1/4 cup Bone Dust BBQ Spice (recipe below)
4 cloves garlic, minced
1 cup ketchup
1 cup water
1/2 cup light corn syrup
1/4 cup lime juice
1/4 cup rice wine vinegar
1 TB. chopped fresh cilantro
1 tsp. sambal oelek
1. Rub the ribs with the Bone Dust BBQ Spice, pressing the seasoning into the meat. Place in a roasting pan.
2. Stir together the garlic, ketchup, water corn syrup, lime juice, vinegar, cilantro and sambal oelek. Pour over the ribs, turning to coat. Marinate, covered and refrigerated for 6 to 8 hours.
3. Preheat grill to medium-high.
4. Remove ribs from marinade (reserving marinade for basting) and grill ribs, turning frequently and basting with reserved marinade, until the ribs are cooked and tender and a meat thermometer reads 160F, 40 to 50 minutes. Serves 6 to 8
Bone Dust BBQ Spice
(a.k.a. The Best BBQ Rub)
½ cup paprika
¼ cup chili powder
3 tbsp salt
2 tbsp ground coriander
2 tbsp garlic powder
2 tbsp white sugar
2 tbsp curry powder
2 tbsp mustard powder
1 tbsp ground pepper
1 tbsp dried basil
1 tbsp dried thyme
1 tbsp ground cumin
1 tbsp cayenne pepper
Mix all together. Makes about 2 1/2 cups
