DH made this for our breakfast this morning. We both found it to be very good.

Apple Pancake

1/2 cup flour
1/2 cup milk, at room temperature
3 eggs, at room temperature
2 large Rome Beauty apples, peeled, cored, thinly sliced
2 TB. butter or margarine
1/2 cup sugar
2 TB. cinnamon

1. Process the flour, milk and eggs in a blender until mixed. Saute the apples in half the butter in a 10 or 12" ovenproof skillet
until tender. Pour the egg mixture over the apples.
2. Bake at 500 degrees for 10 minutes or until puffy and brown around the edge. Dot with the remaining butter. Mix the sugar and
and cinnamon in a bowl. Sprinkle the desired amount over the top. Bake for 5 to 10 minutes longer or until the sugar melts. Serves 2
