36 Hour Sous Vide Pulled Pork

So, as much as for an experiment as anything else, and because I didn't even start smoking the pork until later in the afternoon (and didn't want to get up in the middle of the night to take it off) I finished off my pulled pork in the sous vide for 36 hours (at 165 degrees).

Backstory...I had a small pork shoulder I took out of the freezer and fully intended to smoke it completely, but things got busy and a couple days passed and I started to worry it was just sitting in the fridge too long getting funky. So, time running short in the day, I rubbed it up and threw the pork shoulder on the S6 and smoked it for three hours at 225 with pecan/cherry and a mix of Weber briquettes and Kamado Joe Big Block lump (which ironically, I break down into smaller chunks!).

After the good smoke session, there was still not a ton of bark yet, but had a nice color and smelled amazing. I pulled it from the Q and threw it in my silicon sous vide bag with the fatty drippings from the drip pan.

Pulled it out this morning about 36 hours later. Wow...really good. Missing some of the nicer dark bark pieces, but the texture is crazy melt-in-your-mouth. Flavor is good (a bit on the mild side), but excellent. Wife does not like heavy smoke so she thinks it is the best I've ever done. Certainly was easy and a nice backup option when you don't want to run smoke for 8+ hours.

happy wife, happy life. look's like your weekend will be peaceful. any pics of this masterpiece? would you have considered tossing some in the CI to get crispy bits on the pork? sometimes the best laid plans are the no plans and you just have to wing it.

The thought of crisping some up in a CI pan never crossed my mind, but it will be added to the plan now...thank you!!
