22lb turkey w/ 18x15 roasting pan fits in 22" grill using bricks

Thanks to the help on this forum, I made my first smoked turkey in my 22" Weber grill! My Circulon 18x15 roasting pan ($25 now at Costco) didn't fit inside, so I made some modifications: remove the grill grate and put 2 foil wrapped bricks on the bottom grate to keep the roasting pan at a comfortable distance below the lid (but not so low that it's right next to the charcoals). It worked:


1. Brined and rubbed the turkey with 50/50 salt/pepper mix.
2. Put small water pan in the middle
3. Coals on each side.


4. Cook turkey breast side down and put the lid on. Adjust vents as needed, keeping oven temperature steady at 300 F.


5. Flip over at 1 hour mark. Add coals on each side.
6. Add 1lb butter and cover tight with foil at the 2 hour mark. Add coals on each side.
7. Check internal temps between the 3-4 hour mark. Should be 165 degrees internally somewhere between 3-4 hours.

Sorry I don't have post-cook pics--I was too busy making gravy with the juices and didn't get to shoot another photo. Turkey came out great. Thanks everyone!
Now I'm all set for the REAL cook this Thursday!
