15 Bean Soup

Heat one pkg of dried mixed beans to boil in water, then rest an hour.

Saute one medium onion, six cloves garlic and a red (yellow or orange) bell pepper. Chop three carrots and two cellery stalks. All into beans. Cover with stock. Add a ham hock. Season with two bay leaves, fresh oregano and, one dried guajillo pepper. Add one can chopped tomatoes. Add one cup of coarse chopped ham. Cook beans till tender.

I prefer to brown the ham hock in the oven at 350 for 45 minutes (to eliminate some fat and get get the desirable browning thing going on).

This is serious comfort food.
