Independence Day Eats

So, my great niece got here Sunday and a friend of Pammi's took her to UNCC to look around and get an informal tour. I was joking with her that the campus is just about as big as the town she lives in! She was a little overwhelmed by the size of it.
Her mom, my niece, go here Tuesday morning and they had an official tour of Belmont Abbey college, which is only about 15 minutes from our house. She really liked it!
Yesterday, she went to Queens University here in Charlotte, where they made her feel very welcome! I think that that's the one she liked best of all.

Hard to believe that that beautiful young lady is almost ready for college and that she's family!
After touring the college, we went home and had a fantastic meal. Spatchcocked chicken and tomato pie with buttermilk crust! Soooooo good!

Today, we pulled out all the stops! Pammi made biscuits and gravy. Sorry, no pics, but it was gooooood!
For lunch I made a whole mess of wings! I made so many, I had to throw some on the gasser! Most seasoned with Weber's Sriracha Garlic, some just with a mixture of SPOG and paprika for color.

Had them with homemade blue cheese dressing. Heck, we even had a few left over!

Tragedy struck after lunch! Our dishwasher quit on us! Pammi wouldn't think of having our guests, or me, wash them by hand. so off to Lowe's for a new one! Luckily, I get a 10% discount! With my niece helping(I still can't lift much due to my shoulder), we got the old on ripped out and the new one hooked up in just under 2 hours! Woop! Woop!
Then, out back to cook the burgers with pimento cheese for dinner! We also had some macaroni salad with it.

I hope that everyone has an amazing Independence Day and nothing gets blown up that's not supposed to get blown up!

Phil, those were some awesome cooks. Everything looks delicious and glad you were able to get a new dish washer. You have a very beautiful great niece, good luck on picking the collage of choice.
