    Smoked Pork Taquitos

I had a light bulb turn on when I had left over pulled pork...make taquitos. This 7lb pork butt was originally made for tamales. It has a chile injection and a rub that consists of oregano, minced garlic, dried onion flakes, salt and pepper. I used my meatrakes to shred and added some...

    Smoky Wintertide Breakfast

I love me some outdoor winter smoking, but we haven't had the brutal winter that St. Louis is accustomed to. With such mild temps, I'm taking full advantage of it. The roasted butternut squash pancakes were delicious! My kids ate a bunch of them. A smoked breakfast sausage is my favorite...

    3-2-1 Ribs

A pair of STL style ribs on the WSM. Comes out great everytime I use the 3-2-1 method. In the foil wrap, I used bacon fat and hot pepper jelly...awesome.

    Apple Cider Pulled Pork

A little winter BBQ over the weekend. Smoked this 7lb pork butt until tender. I made some pulled pork sandwiches out of it, topped with a tangy, creamy cole slaw.

    Finding Backyard BBQ Contests

The KCBS website does not list backyard BBQ comps, but the KCBS sanctioned event sometimes puts them on themselves. Go to the organizers website to see if they offer one. If you go to a KCBS event, you would probably come across a flyer for a backyard event. If you go to one backyard comps...

1st Place pork steaks, 2nd place ribs

Thank you for the condolences Charles. I felt sick to my stomach because she's only 2 months old and had only 4 smoking sessions out of her before she fell out of the trailer and dragged about 50 feet. The water pan is a little banged up and there are a few more scratches too, but the integrity...

1st Place pork steaks, 2nd place ribs

Thanks mk, There were only 3 categories in this comp...pork steaks (found in nearly all local amateur BBQ contests), ribs and Chef's Choice. The judges score on taste, tenderness and appearance. This was only my second comp, the 1st being a backyard BBQ contest with no cooker costing more than...

    My New BBQ Tools

Recently, I’ve collected a handful of BBQ gifts from family that correlated with a trifecta of my birthday, college graduation and Father’s day between May and June. I also received a gift card to my local butcher that was to say the least...very cool. I’m using it to buy meat for an upcoming...
