    ATC Suggestions for 18.5" WSM

Hi all, I have been looking for something fairly simple that will let me do overnight cooks without having to go out to check on the cooker. I already have a Maverick 732, so I don't need a food probe. I'm looking for a fairly basic but reliable system. Presently, I'm considering the Party Q...

First cook on the Mini-WSM, Beef Chuck

Thank you for the compliments, Jim. I made the mini myself, but we bought the house with the patio already in place. We love spending time outside on it!

    Which CI grates to get?

I love my craycorts but they can be a hassle to take off for lighting the chimney over the gas assist and then putting back on over the hot lit coals. Hassle asside, I'm happy with my decision to spend the extra money on them. If I had selected on of the cheaper alternatives, i KNOW I would...

    Reusing Charcoal

I've actualy done this with less than stellar results. The used in the middle is like a barrier preventing the fresh on top from lighting.

    Reusing Charcoal

Thank you for your reply. I've never tried putting the used coals in first. I had alwys put the fresh on the bottom since it was bigger and would not fall thru the gaps. I'll have to try out your technique!

    Reusing Charcoal

Hi Kevin, Thank you so much for taking the time to visit our forum and answer our questions. My question is: Whenever I grill on my performer platinum, I have leftover charcoal that hasn't fully burned out. When I try to reuse it on the next cook, it always gives me issues and is very...

Midsection Handles on a 22 WSM

I used some universal fit garage door handles that I found at Home Depot. They lined up with the grate holder holes perfectly and the cover still fits just fine on our 18.5" wsm. It's slightly harder to slip the cover on, but it absolutely still fits.

First cook on the Mini-WSM, Beef Chuck

Thanks for the kind words guys, it definately was a tough cut of meat. For what it's worth, my wife said she enjoyed it more than my pulled pork even if it was a bit dry, salty, and spicey for her taste. I liked it too. Better than my pork butt? Probaly not. But it was still better than...

First cook on the Mini-WSM, Beef Chuck

A week or so ago I went to a new butcher for the first time. I asked for two chuck-eye steaks and what I got was two 2 inch steaks labeled as "Chuck Steak". They totaled to about 3 pounds. I had a strong hunch that they didn't know what they were doing and gave me two steaks cut out of straight...

    Ravens Mini

I don't presently have any pics of the inside, but here's how I made it: 1) Cut hole in bottom of pot leaving ~ 1-2 inch lip all around 2) Coaxed a charcoal grate from an 18.5" kettle past the steamer insert ridge which now rests on the lip I left on the bottom of the pot. The heat diffuser...
