    Sauerkraut

While sauerkraut is made on the grill it definitely goes on grilled items like brats. My wife and I went and picked up 10 huge heads of cabbage today. We spent the afternoon shredding it and packing it in the 10 gallon crock. In 4 weeks we will be canning sauerkraut.

    Carnitas on the WSM-Mini

I have had more than one person ask about crisping the meat with the broiler rather than frying it. I do this for 2 reasons. First is that it makes less mess. Second it is more healthy. It also needs more attention to do it this way. Too long under the broiler and you end up with rock hard bits.

Sriracha Kettle Fried Chicken This is the 'recipe' I used for Throwdown #13 - Chicken Wings. It is not so much a recipe as it is a list of ingredients since I just eyeballed it and will be changing some things up in the future. Breading #1 Flour, corn starch, garlic powder, masa (corn...

    Carnitas on the WSM-Mini

Thanks all! Jim, no hot sauce needed, the heat was in the rub! I started the fire at 3pm yesterday and we ate around 6pm. I closed the top vent but forgot about the bottom ones. I went to dump the ash today at 1pm and still had live coals. I found this out when I burned my hand trying to...

    Wisconsin Mac and Cheese!

Interesting. Here in Wisconsin you might get strung up for doing that, but if they are past their squeak I dont have a problem with it. I am always using them to make poutine.
