    I am of the mind that we should join forces between the live heatermeter cooks and the post-cook graphs. It is really cool to watch the live cooks, but a good frame of reference to come back and look and see how things turned out once the machine has been turned off.

    Short ribs are on with version 2 of my prototype air burner. Very strange today when I plugged the box in, it said that pit temp was 0 degrees despite not having a probe plugged in. When I did get a probe in, the fan didn't go on, the PID's didn't move, nothing. Rebooted....nothing. Rebooted...

    The 22" WSM dial thermometer is crap. Don't ever trust it. First of all it is measuring dome temps which are different than the cooking grate temps. I have found my dome temps to be 20 - 30 degrees off of the top cooking grate. I have found the top and bottom cooking grates to be 10 - 15 degrees...
