Bob, I go right out of my original 1980's Weber Manual. I use the brine recipe out of the old Weber cooking times magazine. I always loved getting those in the mail!

Kettle smoked Turkey, anyone have done it?

Bob, same here. I have not done a turkey in the house since I first got my performer in 1987. Biggest was about 21 pounds, will touch the top of lid for the first hour then it settles down. I do it exactly like you described. I drape a piece of foil over it once I have the desired color I want...

    Convert kettle to gas grill?

I agree with finding a Q and not putting anybody or anything in harms way. My dad had a GAS weber..... and odly enough I think we turned it into a charcoal unit! Watch Craigslist Q's go cheap. Espically if they do not know how to use the new style regulators...... just sayin....:p

I do not use my tank, I start with a Weber starter cube and Chimney.

Which is more valuable, old SS Performers or the newer ones?

Each to their own opinions I guess. I have a stainless, it has a coal bin that will hold a 20lb bag of blue with room to spare, cleans up like new with a scotch brite pad or a majic eraser pad. My Genesis Gasser has the palstic side tables and do not clean as easily....... but the bottom line...
