    Just wanted to add on to this -- I did the same. Because I'm insane though, I brined, butterflied and crammed TWO turkeys into my Weber OTG. The HM kept it at a steady 350 for most of the cook. This is the first time I've used it for anything higher than smoking temps.

    I ordered a few weeks ago from http://www.bbqequipmentstore.com/Replacement-Probes_c169.htm If you order two or more and they're $10 each. I got a pit probe and a food probe. But they seem to be short as well -- only ET-72 food probes in stock.
