    Dry it off if you want a good sear on the meat otherwise you can leave it wet.

    Should I upgrade to a Sear Burner or leave my EP 310 alone?

    I know this is late but 560 degrees should give you a fine sear. Do you pat your steaks dry before throwing on the grill? The reason I ask is because they will not sear well if they have surface moisture.

    I use my Sizzle-Q for cooking breakfast on my Genesis. Bacon, Hashbrowns, Eggs for my wife, Sausage.

    Either way is fine but just to add another opinion to the mix, a while back I watched this video and gave the method a try. Low and slow fire with an open lid. I was very happy with the results of my chicken. The video is long but check it out.

    Cooler corn works great when you have several to do. After it is "done" in the cooler I will throw on grill for a few minutes to get a bit of flavor.

    While in Monterey did you get a chance to drive 17-mile drive? Its beautiful as it winds the Pacific ocean. Also takes you to the Pebble Beach golf course. An awesome place to visit.
