    Hi Martin. Good to see another Uk WSM fan. I wonder how many there are? I’ve an 18 WSM and can recommend the apple brine turkey recipe (Christmas wouldnt be the same without it) and the salmon cure recipe on this site. It holds temp amazingly well and very versatile. Happy smoking ��

    that would be Jersey Channel Islands....South of the Uk mainland and very close to the French coast...a very small island. Hope you guys Google it! I use a weber kettle and have just taken on my first smoky mountain.....great site and looking forward to some real low and slow... Cheers
