    Re the thermometer. I don’t know if it makes a difference, but I think that if the stem isn’t straight, then there might be binding in there causing it to be off. If your thermometer is bent, try straightening it and see if it works better. Gerry

    The real old Genesis grills used a 1/4-20 nut with I believe a toothed washer attached. I would just use 1/4-20 nuts. Stainless if you want, but no real need for that since the bolt isn't stainless. Gerry
