Project Birthday Brisket: The real deal.

This... I always split cause of the difference in times especially with my setup. Just easier to deal with separately. That and a full packer doesn't actually fit in my 18.5 hehe.. That being said the finish looks good for the point.!!!

Labour Day Weekend cooks (beefs and chickens)

Certainly, it’s her second favourite potato delivery device! Basically cook the potatoes and mash em up and season it up as you would but try and keep it on the dryer side. Then add flour to combine to a dough (basically a non egg gnocchi dough). Divide into equal sized balls, flatten and form...

Labour Day Weekend cooks (beefs and chickens)

Honestly its been a cycle since I meandered out to actually cook some stuff this past weekend for the family. Friday night was a spatchcocked chicken with some garden beans and noodles. This guy was cooked on cherry wood which was delightful. Then on Sunday my wife asked me to pop on...

Some Porchetta and a strange ice cream

You’re definitely not wrong there, but it’s not “normal” for over here that’s for sure! I’m also a big fan of red bean and mung bean bubble tea so now you have me thinking!!

Some Porchetta and a strange ice cream

It was one of those things that started as a quirky thought in my head and ended up as a surprisingly good idea.. I made up some ginger molasses cookies and made some ice cream sandwiches with it... Now there was a spark of pure genius I gotta say..

Some Porchetta and a strange ice cream

G'day folks, its been a hot minute since I was last here sharing a cook. Couple of weeks back I had the urge to do something and grabbed a couple of small skin on pork bellies to do a couple of porchettas for a few friends. I mixed up a double batch of chorizo and fried that off, and got to...

    A return, from Calgary

Gday folks. It has been a long long time since I participated here on the board, and for that I am sad. I haven't stopped cooking just stopped with the online side focusing on my landscape photography instead. I hope to get a few posts up in short order catching up on some recent cooks, but...

    HnF Brisket

I have only ever done hnf briskets, first was an accident but every subsequent cook was on purpose. That looks spot on and exactly how I remember mine looking so I can say that works for me!!

    Thai Thighs and Sides

That looks awesome Cliff, never in my wildest dreams would I have thought to roll corn in crushed peanuts tbh. I have lived a very sheltered life it would seem, and this cook makes me want to expand!

Made my 2nd and 3rd smoke on my new WSM 18 inch this past weekend

I'd say those two cooks were a major success! The colour on that salmon is unreal

First Smoke from this past weekend

Ribs are always a great way to play with the WSM!! I'm not much help on the photo side as everything is hosted on my own page for me so, I know some folks have used smugmug, flickr, I used to have success with google photo but that has been sucked into the ether with the rest of the google suite.
