I use the pitmaster iq 110 with my WSM 22.5. I didn't use water in the pan. I foiled the water pan and placed a 15" corderite pizza stone wrapped in foil in the water pan, and foiled over the stone and water pan again. Worked like a charm. I don't know if this is good for the temp probe...
