Very Berry Chile Cherry Sauce

This is a variation of Chile Cherry Wing sauce as posted by Mark on 11-05-02.

1c Black Berry Merlot
3Tbls Fine chopped Shallot or Onion
1Tlsp Fine chopped garlic
2Tbls Cherry preserves (I like Polaner wild cherry)
1/4 c Ketchup
3Tbls Honey
1/2 c Favorite hot sauce
2 Tbls Favorite rub
dash or more Red Savina Hab. powder or chipotle powder.

Put Merlot in sauce pan with onion and garlic bring to a boil and reduce to a syrup. Add remaining ingredients. Reduce heat and simmer for about 10 min. If too thick can thin out with more Merlot.

This makes a outstanding wing sauce or good on any poltry or ribs. I get my habanero powder from the The Spice House
