Chicken Pierina

So even though this is not a grilled dish Guy's requested it so here it is. This is a dish my CEO's Mom has made for many decades and loved by everyone who has tasted it.

8-10 Chicken Thighs are preferred but Drums would work, the bone in makes the difference I am told

Dredge in flour seasoned with salt pepper and oregano

Brown in EVOO with onions and a four or five cloves of fresh garlic diced in a deep Dutch Oven type pot

1.5 cans (around 20 ounces of vegetable broth) (sweeter than using chicken)

1 can diced tomatoes

5-6 medium potatoes roughly quartered

Fresh Green Beans

Parsley and Basil

Cook all together on the stove top at first stirring ingredients occasionally for 1/2 hour

Into the oven @ 400 for approx 1.5 hrs.
