Salmon Chimichurri with Garlic Smashed Potatoes

For the sauce:

1 bunch parsley chopped
Garlic minced (as much as you like, I added 2 cloves)
2 tbls olive oil
1tbls onion powder
Squeeze of lemon
Salt and pepper
Dried red pepper flakes (I used a dried szechwan pepper chopped from the garden)

Combine above ingredients and mix well. Slather sauce over both sides of salmon filets. To cook the fish I used the method described below by Clay J (great method I recommend trying if you haven’t yet)


WSM Grilled Salmon

Garlic Smashed Potatoes:

1-1.5 #’s red skin potatoes unpeeled
Whole clove(s) garlic (your discretion again)
Milk
Butter
Horseradish
Dijon Mustard
Salt and Pepper

Add potatoes and whole garlic to cold water, bring to a boil. When potatoes are done, drain potatoes and keep garlic. Add potatoes and garlic to bowl and mash adding remaining ingredients to taste.
