The amazing thing about this place is that it's not yet very well known. It's on the est side of Toronto, down by the water. I had a full rack of ribs which somehow comprised abut 16 of them, and a half rack comes up yo 8. The ribs pulled away from the bone by lifting it up, and there was a clear and definite smoke ring. Served dry, there's a really nice homemade sauce with a strong vinegar flavour. Tried the PP, and it was good, but not as great as the ribs. But the beans were simply amazing.

I spoke with the assistant chef, and, indeed, the ribs are smoked for full five hours. This is as opposed to the place, Barque, that's getting all the ink where the ribs were dreadful sand smoked for an hour and a half!
