Pammi Wanted Brisket...

so Pammi got one! Pammi and I love Top Chef. This season they are in Texas. We knew that sooner or later,brisket would be on the menu!Last weeks episode was the barbeque episode we were waiting on,and Pammi commented how I hadn't done a brisket in a while. I think it was high time I did one!
The closest grocery store sells highly trimmed small flats. Mine was a 3 1/2 pound CAB that they left some of the fat cap on. Goodie,goodie!

Seasoned with Webers herb and garlic and TJs smoke seasoning and bacon. Cooked it MM,at 225-250* with a couple chunks of mesquite for 5 1/2 hours. Let it rest and O.M.G! Nice smoke ring and flavor. Very tender and yummy!
 
Thanks y'all! Those little briskets are just the thing when you want something smoked,but don't want to cook a ginormous hunk of meat!
