4-6 Freshly peeled whole beets, cut into chunks
1 large onion, thickly sliced
1 head garlic, peeled and separated
salt and pepper
generous amount of olive oil
fresh or dried herbs (thyme and dill work well)
Over direct heat on the grill, in a vegetable basket with sloped up sides, cook the beets and onions for about 20 minutes, stirring occasionally. The onions, when caramelized will tell you when the beets are tender.
I do this exact same thing with halved brussels sprouts. They are both wonderful
