Easier Ribs

Dust ribs with rub
Cook at 300-(275-325 is OK) for 2-2 1/2 hours
Foil for 30-45 min. (depending how fall off the bone you want)
Finish out of foil for 20-30 min.
TOTAL cook time is 3- 3 1/2 hours.
 
I started with 1/3 of chimney lit coals for a 'MM' cook. The cook began with about 1 inch of water in the pan. It will boil out to leave an empty pan for the higher temp cook.
