Wings on the WSM

I really hadn't planned on taking pics of this cook as was in a hurry to get these done andd take to a party, but they came out so good, I just had to take one, once inside.

This was the first time to use the WSM non-minion and I was very impressed. I have done plenty of indirect on the OTS, but thse came out much different. Even though the kettle runs just as hot, the fat rendered better this time and the skin was great. Same wings from costco as always.

Seasoned with rub and let marinate all day. Then onto the grate with 1 1/2 chimneys of lit KCB. An hour later.

I stumbled across this rub recipe and decided to give it a try. I will add a little more heat to it next time, but will defiently use again.

Jeff - They look great. If you have any to reheat, I love to flash fry them around ~375. Does a great job heating them up and crisping the skin the following day.
