I'd like to share my experience making poortex and my first cook on it today.
P.S. worked out great.
P.P.S. I am attaching scheme with all dimensions in mm (millimeters) that I used to create my own poortex. This one is made of aluminium (aluminum) sheet. I personally made a cardboard template first before copying it to metal sheet. I used rivets and a little plate same height, but you can use bolts with washers and nuts, as well as make your plate a bit longer instead of using a little plate as I did to attach and secure the cone.
P.P.P.S. I know this is not a receipt thread, but is someone possibly asks on how to, all info is here. Brined chicken with honey and soy sauce (couple table spoons of each for 10lb chicken quarters) overnight, then dried it with paper towel, let it dry for a few hours in my fridge for few hours, then sprinkled with kosher salt and Weber kick'n'chicken seasoning just a liiiittle bit. Did not flip while cooking. Took about 45 mins to get to 165-170 internal when pulled off the kettle. This bird was looking and tasting amazing.
