Vacuum Packing Brisket

I would like to smoke a brisket this weekend and vacuum pack and freeze it for later enjoyment. I have never done this before is there anything special that I need to keep in mind?

I plan on using my food saver vacuum sealing system with quart bags.

I followed Bryan's advice last month and it worked great. Only difference is that I did not seal whole brisket. I did it in a couple of vacuum packets for dinners later.

We used one about week or so ago for dinner and it was just as tasty and tender as just off the grill!

Bringing a vacuum sealed pulled pork to a friends house tonight and am expecting similar results.
 
I sealed and froze then thawed for eating a few weeks later. Reheated in 180 degree water for about 20 minutes.
