This is my late submission for Weber GrillFest I. Got some Prime ribeyes from Costco. And here we go...

Since I invested more $ in the meat this time, I decided that I might as well try to make the steaks look as aesthetically pleasing as possible, so I tied them into a circular shape with some butcher's twine...

excellent looking steaks! Can you tell much difference in the prime grade?

In terms of tenderness and juiciness, I notice a difference. My two year old daughter seems to have taken a liking to Prime grade beef, which says something about the tenderness, but unfortunately spells doom for my wallet :p.
 
They look great.

While I like my Choice steak "tartare", I cook Prime beef closer to medium/medium-rare because of the higher fat content. I like that flavor to melt into the meat.
