UK based WSM 22½" user questions (18" users might know)

I use a terracotta pizza serving plate as a heat sink in my 14.5" WSM. Works perfect. The water pan is now collecting dust and cobwebs.

Searched for ages trying to find this stone in UK and saw the BGE advert but the ad I saw said (we ain't got any and dunno if we will get any more" (see ad here)

but looking at your link they want £75 for the plate but BGE users then get obliged to pay a further £100 for a 'plate holder' that you must buy with the stone and then shipping on top.

Glad I went with the WSM despite its oddities. That said, many thanks for the link. I did phone to see if they had any in stock but of course it was after 5pm and they are too pricey to
cater for people that work after 5pm. I have ordered a mild steel 480mm plate to sit in to the water bowl slot and if I get this on Wednesday as hoped I should have some feedback for it soon.

I bought 10kgs of baby back ribs today and ordered a 15lb packer brisket (collecting tomorrow) and dragged about 6 kilos of chicken thighs out of the freezer to defrost to run some tests with.

I thank the Lord I am not a vegetarian.
 
I have used Weekend Warrior charcoal this season on my WSM and Kettle. It is softer than Weber briquettes but I have no major complaints with it.
