Turning over your shoulder?


 
I've never seen the need to either. Although I was cooking 6 slabs of ribs one time,and halfway through,I swapped top rack ribs to bottom and vice versa for more even cooking.
 
If only using the top grate, there's certainly nothing wrong with turning butts over once the bark is set. However, although that'll probably even up the cooking some, I rarely do it in the wsm. And you didn't ask, but I would actually advise against it if you were cooking butts over butts.
 
I generally do not turn shoulders but when I want to move them from top rack to bottom, I have a pair of bear claws that work great. I also use these to take chickens and other big things off the smoker.
