So I bought a 7lb belly yesterday that I cut in half. It's curing now and I will bring out of cure probably next Sunday....so here is my dumb question.
After I smoke them....which direction do I slice for bacon when done? Obviously this was a long rectangular piece of meat so do I cut it the "long" side or the "short" side. Thank you in advance.
