Starter my Mini Build......Plenty of Questions

So I finally got my 32 quart pot which was no easy task in the great white north but thank to Wally World USA and a trip over the river to NY, I have it.

My first question and I'm really stuck is the diffuser. My steamer insert is untouched and unmodified currently. I know some guys just use the steamer insert. Others use a terracotta pot, some use a pizza pan, some a tart pan..........and I'm sure plenty of other things. There is likely no right or wrong choice, just different experiences.

I've seen some guys drill a pile of holes in the bottom, some just cut most of the bottom out. I'm leaning towards cutting out the bottom as I hear it makes higher temps cooks easier if you want to do them, but I'm open to all comments.
