I did this cook a few weeks ago.

I St. Louis cut one rack of spare ribs. I rubbed it with my standard pork rub (sucralose, chili powder, paprika, garlic powder, onion powder, salt and pepper). I cooked it on my 22 1/2" WSM at 250F for about 2 1/2 hours unfoiled, then foiled for about another 2 hours. I then slathered it with Sweet Baby Rays barbeque sauce.

I cut up a sirloin steak and grilled it on my 22 1/2" OTG. I made quesadillas out of it, with a 4 cheese Mexican mix, cilantro, green peppers, onions and tomatos.

It all came out great!
