Peruvian chicken. Made some tacos and sandwiches. Mortar and pestle for the paste...garlic, cumin, paprika, salt, aji amarillo, pepper, white vinegar, veg oil. Slather-up the chicken. Fridged for 8 hrs.

Grilled some boneless short ribs for some beef tacos. Not bad.

And the sandwich. My wife and I play the "This is going on the menu" game. If we owned a restaurant or food truck, what goes on/comes off the menu? This would definitely remain on the menu permanently. The green sauce is tasty stuff. Goes really well on just about anything.

Portuguese rolls, shredded lettuce, grilled onion, green sauce, mozzarella, heirloom tomato. Bacon went on mine...wife left it off hers.

Ina Garten's Company Pot Roast, seared-off on the gasser then moved inside. Running low on propane.

Seriously good looking stuff........with all you guys doing Peruvian chicken all the time it really makes me want to give it a go.
Maybe need to find a trustworthy recipe to get my ideas from.......
That Dutch oven looks like it has had some good cooks in it, I love the 2 that I bought although I don't use it as often as I thought I would.

Maybe your wife gets like mine does......I get posting too much and I get some attitude from her about it......it all makes sense when you see how it works at my place...I just say this as you combine a bunch of stuff together, makes sense in my head anyways.

Good show on the tunes.....the last one though would be something I would try to skip......not a fan of their music, and I try not to be picky.........a musical artist once told me that you shouldn't listen only one type of music...for the life of me I cannot remember the exact quote at this moment.
Tangerine is a killer good one ;)

Not trying to hyjack the thread.....but not all 70 are Neil....there is a few in the where he must be just mentioned in the credits or something......
Closer count is around 60...buffalo Springfield and stuff like that was all in there....

We make chicken every week.......I must do this cook now, anything I should do for sure or avoid doing...your tips!?!?!?!
Looking over your pics again.....everything looks really good.....I have to look into this green sauce as well....it's just not a clever name....and I see it online called green sauce.

Incredible cook Tim and photos are over the top. Some awesome music there, seeing that Led Zeppelin III has reminded me it's been too long since I last listened to Physical Graffiti
