Smoking fish

Anyone has ever smoke salmon with hickory or mesquite. I have every ingredients I need for marinade but forgot to look for what kind of wood I should use. Since I have mesquite and hickory at home, I'm wondering if it would do a good job or that I should wait and go to the store for other wood.

I've used hickory chips sparingly for salmon with good results. I prefer Pecan or Apple.

I would think mesquite is too harsh/heavy for fish.
 
Hi... I use mostly maple and alder to smoke salmon. Apple or any fruitwood works too. Mesquite is a bit "strong" for fish but I use it for pork and beef. Good luck...

Between what you have, the hickory: but very little.
My preference for "wood" be alder or apple. That said, I'd cook with what I have and then next time try something else...
 
I used hickory lightly. Also a spicy mustard slather and sprinkled with lemon pepper seasoning got me 5th place in a competition. : )
 
Here are pictures of the salmon. Right after I cured it and also after I smoked it. Not very happy with the result. First, it cooked too fast and I caught it at an internal temp of 160C after 45 minutes. I was surprise because I had a my thermometer on top of the cover at 275-300 which means 25C lower on the grate. The ends are also a bit dry. Finally, I don't know if it's because I used iodized salt or that I cured it too long (5 hours) but it's too salty to my taste.

On the positive side, the use of hickory wood gives it a great smoke taste. I used two small chunks that lasted the whole 45 minutes.

At least, just before, the wings I've made for lunch were very good.
