Skirt Steak

Bought, marinated and grilled my first skirt steak.

Turned out rather well.

Recipe from Chef John at Food Wishes

Ingredients for 4 portions:
1 whole beef skirt steak, about 1 1/4 pounds (no need to trim, except for any obvious large chunks of fat)
salt and cayenne to taste
For the marinade:
2-3 cloves minced garlic
2 tbsp ketchup
1 1/2 tsp freshly ground black pepper
1 tsp salt
1 tsp dried rosemary (or 1 tbsp freshly minced)
1/4 tsp hot sauce, or to taste
1/4 cup rice vinegar
1/2 cup strong, freshly brewed coffee
1 (12-oz) bottle cola

Made a caprese salad with some Sun Gold Tomatoes(from my garden), fresh mozzarella, red onion and basil( from my garden)...EVOO and Balsamic Glaze

Plated with the salad and roast yukon gold potatoes with bell peppers and onion

Reduced the marinade to sauce the steak at the end. Really great recipe.

Great execution of a cool recipe. Was the coffee flavor of the marinade subtle or strong?

Very subtle...

Perhaps using espresso would give it a bigger punch.

Just using dark roast Dunkin Donuts coffee gave it a subtle flavor...but it's definitely there.
