Ribs and Rhum

half rack of meaty beef ribs marinated for a very short time in a strong picante flavoured liquid then heavily peppered

thick sticks of hickory with my choice of charcoal

at this point ▼ I wrapped them in foil and back on the WSM for another hour.

rested unwrapped, then sliced and....

....plated only with a fine glass of rhum

while liz bowls with her family, i eet (and drink) like a king ;) (or a pirate)

OK now I'm sure you and your butcher have a special relationship. Those are the meatiest beef ribs I have ever seen! And you did 'em justice! Oh, man, that looks good!
 
You were biting
while Liz was bowling,
and now I'm bawling since I didn't get any of your top shelf ribs or rum!
